Louisa Foods was founded in 1964 by John Baldetti and his father, Ferdinando. Ferdinando owned Garavelli’s, a popular restaurant in St. Louis for over 60 years. One of the most popular items sold in the restaurant was ravioli. The company was founded with the intention of producing “homemade quality” ravioli for restaurants to serve their customers. The ravioli would be based on the recipe prepared at home by John’s mother, Luisa, who the company was named after. Louisa Foods is currently being run by the third generation of the Baldetti family and a fine group of non-family managers.
